Holiday cookies that are apple and cinnamon flavored. The recipe came from a Taste of Home book and made 4 dozen--2 dozen of which I have eaten in the last hour. This definitely has a lot of cinnamon. If you do not like cinnamon, I would skimp on the amount. Mine only took 11 minutes to cook.

  1. Cream shortening and sugar until light and fluffy.
  2. Combine the flour, cinnamon, baking powder, baking soda and salt; stir into the creamed mixture.
  3. Stir in the apple and walnuts if desired.
  4. Drop by heaping teaspoonfuls onto lightly greased baking sheets.
  5. Bake at 375°F for 13-15 minutes or until golden brown.
  6. Remove to wire wracks to cool.

these are pretty good, but, i tasted no cinnamon even with the huge amount the recipe called for. maybe i'll try adding more next time, but, this makes me feel like the cookie is a little healthier than a typical overly sweet one

I made these for PAC Spring 2009. I only got 2 dozen because I did about 1 tablespoon for each cookie. The 1st dozen were gone before the 2nd came out of the oven. I creamed butter and the sugar together then added the egg and vanilla. I also only added 1 teaspoon of cinnamon because DH isn't a fan. We can't have nuts so I added these things I just found called caramel bits to half of the dough. They are little caramel pellets. They were very good with and without. Considering how fast these are disappearing I will make them smaller next time so that we will have some to eat the next day. Thank you for an alternative to chocolate chip cookies (my family's favorite.)
