Apple Dapple Cake

An apple lover's cake for sure!! Very moist with a carmel-like frosting. Great for serving guests and for family celebrations. This recipe has been used frequently by my relatives.

Over 30 years ago my mother in law served an outstanding cake for my then husband's. Early December birthday. She called it an Apple Dapple Cake. Through divorce and moves I lost the recipe. I scoured the internet trying to find it. Called her and she had also lost it, so I thought I would try one of the several I found. They weren't quite right. So, I called her agin and she said "No wonder! You didn't add 1 cup of coconut, 1 cup of light raisins and a few micro shreds of FRESH ginger and a small squeeze of fresh lemon" Made those additions in the next cake a few weeks later - MASTERPIECE!! Exactly as I had remembered it! This was over 20 years ago! My now adult, married sons, from that cake forward request 1 of 3 cakes for EVERY family event. Apple Dapple Supreme, Momma's Carrot Cake or Not Your Granny's Pumpkin Roll. The all are the basic recipes you can find "doctored" to our families tastes. Use the base recipes, then follow your taste buds!! Yummmmmmmmmmm

  1. Beat eggs and mix with sugar, oil and vanilla.
  2. Combine flour, salt and baking soda and add to egg mixture.
  3. Fold in apples and pecans. Pour into greased and floured tube cake pan.
  4. Bake at 350 degrees for 1 hour.
  5. For Frosting: Bring brown sugar, butter and milk to a boil. Boil only 2 1/2 minutes. Cool and spread on cake.
