CAKE
- 3 cups flour
- 1 1⁄2 cups sugar
- 1⁄2 cup light brown sugar
- 1 tablespoon baking powder
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon ground cinnamon
- 1⁄4 teaspoon ground nutmeg
- 1⁄4 teaspoon ground ginger
- 1⁄4 teaspoon baking soda
- 4 eggs, lightly beaten
- 1 1⁄4 cups mayonnaise (do NOT use reduced fat or fat free)
- 1 teaspoon vanilla extract
- 1 large tart apple, peeled and finely chopped

CRUMB TOPPING
- 1 cup flour
- 3⁄4 cup sugar
- 1⁄2 teaspoon ground cinnamon
- 1⁄2 cup mayonnaise (do NOT use reduced fat or fat free)
directions
- Preheat oven to 350. Grease a 13" x 9" baking pan; set aside.
- Cake:.
- In a large mixing bowl, combine flour, sugar, brown sugar, baking powder, salt, cinnamon, nutmeg, ginger and baking soda; set aside.
- In a seperate mixing bowl, whisk together eggs, mayonnaise and vanilla until well-blended and smooth.
- Mix chopped apples into the flour mixture; then stir in the egg/mayo/vanilla mixture. Stir until well-combined. The batter will be stiff. Evenly spread dough into prepared 13" x 9" pan.
- Crumb Topping:.
- In a mixing bowl, combine all crumb topping ingredients and mix well to form course crumbs. Sprinkle crumbs over batter in pan.
- Bake at 350 for 50 minutes or until a toothpick inserted in the center comes out clean and crumb topping is golden.
- Cool in pan on wire rack. Serve warm or at room temperature.

I have to say I'm very pleased to be the first one to give this review and rating.This was made on 4/3/08,and my first mistake was only making half.I've heard of adding mayonnaise to cake batter before,but never using it as part of a crumb topping.And since only half was made,the baking time was cut down to about a 1/2 hour.The smell as it was baking was just wonderful.And after it cooled down a bit, and ate a piece ( or two )the taste was just as wonderful.This will be made again.Thank you for posting,and "Keep Smiling :)"
