    These are so good, especially when they are warm! Butter is always delish on them, and recently I tried cream cheese on them, and was pleasantly surprised! Don't wait until winter to try these!

    Ingredients:

    Directions:

    1. 1
      Mix flour, baking soda, cinnamon and salt in a large bowl.
    2. 2
      In a separate bowl, whisk eggs, sugar, oil, sour cream and vanilla until smooth.

      Stir in apple, cranberries and walnuts.
    4. 4
      Fold into dry ingredients.

      Bake at 350°F, for 20 to 25 minutes.

      I don't understand why this recipe has not seen the light of day. Excellent recipe. I was looking for a bread recipe that had nuts in it and came across this one. I doubled the recipe and substituted dried cranberries for fresh. I used about 1/2 cup of cranberries vs the 3/4 cup recommended. I also used a bit more cinnamon. Since I was looking for a loaf and not muffins, I was not sure how long to cook a loaf. I cooked the loaf a bit too long - about 55 min. I would cook it 45 min. next time. This recipe will make one 9x5x3" loaf. Also, recommend you butter and flour the pan before baking.

      Made these for 2009 PARTY event. Used craisins instead of cranberries because I didn't have any not already frozen and didn't want to wait for them to defrost. I went with the instructions which I read NOT to peel the apples, and so very glad I didn't, the peels added lots of good flavor and fiber to the muffin. These were moist, tasty, and easy to make...what more could you ask for? Thank You Fluffster for another fantastic recipe.
