I ABSOLUTELY NEVER have leftover cranberry sauce, mostly because I make a large batch of it probably more than 12-15 times a year! Love that stuff, & just knew that your recipe would give me another great way to use it (which it did)! Definitely worth a try, people, 'cause it's delicious! Many thanks for sharing the recipe! I had some leftover cranberry sauce in the fridge & decided this was the way to use it. I scaled this down to serve one and did my filling mixture in the microwave rather than dirty another saucepan. It seemed a little strange to my tastes at first, me being used to an omelette being savoury but this was a lovely brekky which kept my "sweet tooth" happy. Thanks Ellie!
