Apple-Cranberry Cottage Cheese

"This recipe is modified from a recipe I found in the Kraft Foods website for healthy eating. You can use other dried fruits in place of the cranberries although I haven't. Also, use nonfat cottage cheese to cut back the calories even more. The applesauce adds the moisture that nonfat cottage cheese needs. I use the recipe as a side for brunch menus. Guests always rave about it."

  1. This wa a great idea! I never thought of combining the two..I used blueberry applesauce and put some fresh blueberries on top...yum!
     
  2. I have been making this for a while now, but I use raisins instead of dried cranberries. I'll have to try it this way instead.... I also usually warm it up in the microwave, at least enough to take off the chill from the fridge. I don't use any sugar, either; just the cinnamon.

Cooking is a new skill for me. When I was in my 20s I didn't like it too much because I thought, if I knew how to do it, then my family would expect me to do it. But now and I'm in my late 30s and once I got over that thought and started experimenting, I found it very relaxing and creative. It became a nice complement to my excellent entertaining skills. I used to always cater my gatherings until I realized that easy and tasty recipes were far more appreciated by friends that anything they could go get at a restaurant.
