  • Heat oven to 350 degrees.
  • Line 12 muffin cups or spray with nonstick spray.
  • Combine flours, sugar, baking soda, cinnamon, and salt in a bowl.
  • Add apples, carrots, raisins, walnuts and coconut, and mix well.
  • Add oil, milk, vanilla, and eggs.
  • Stir just until combined!
  • Fill muffin cups 3/4 full.
  • Bake 20-25 minutes or until they test done.
