I made these yesterday and they are good. I made a couple of changes: I used half whole wheat flour and half white flour to make them more healthy. I also grated the apple, and that seemed to work great. I needed only a tiny bit more liquid to make up for the fact that I used whole wheat flour. The waffles smelled divine while they were cooking, and tasted great when they were done: not terribly sweet, but with a great apple-cinnamon flavor. I also made homemade applesauce to put on the waffles as a special treat. The kids gobbled them! Thanks for the recipe, Happy Hippie!

I thought these were pretty good. I decided to use whole wheat flour and applesauce in place of the oil for healthier waffles. I also chopped the apples finely instead of thinly slicing them so that they were more evenly distributed. One thing I did find was that I had to add at least 1/2 c more milk because my batter was so thick. The flavor was good and my 3 kids gobbled them up AND I have enough for tomorrow morning. I also made some cinnamon apples for a topping; thinly sliced one peeled apple, covered with water, sprinkled with cinnamon and 1 tbsp brown sugar. I let that simmer until apples were soft and syrupy. It was a great topping, though some of my kids preferred powdered sugar or maple syrup.
