These were very good. I made some healthier changes and my kids still enjoyed them. I used all whole wheat flour, 1/2 c each of the white and brown sugar, and 1 c applesauce in place of the melted butter. They were very tasty! I also liked that this muffin recipe made more than the usual muffin recipes.

great muffin! a little too sugary for my taste so will cut some next time around but definitely yummy! Used 2 1/2 chopped empires and shredded the rest of the of the other half. Delish, thanks for posting :)

I used Honeycrisp apples in these muffins (the apples had been around a while and I was looking for an apple muffin recipe that looked good; I think I had closer to 3 cups of chopped apple). I substituted whole wheat flour for white. Otherwise I made the muffins as described. They were moist and delicious, and I would definitely make them again!

So very good! I had a handful of Granny Smiths which I sent through the peeling/coring machine, then easily chopped into fine little cubes. I like sweet and these muffins fit the bill. Not only will I be taking one for my OTG breakfast, but an extra one for my lunch break at work.

Hubs liked the chunks of apple in it. I did add a sprinkle of cinnamon sugar on top before baking (what can I say, I love cinnamon, but that is the only alteration I made. Thanks for a great one that I can put into rotation!

I used white sugar, since I was out of brown, subbed whole wheat for one of the cups of flour, homemade unsweetend applesauce for about half the butter, and added a little nutmeg and allspice with the cinnamon to move them more towards apple-spice. I used 3 medium apples roughly chopped, since I like the chunks in the muffins. With all those substitutions, they came out a bit sweet for me, next time I'm making these changes I'll cut back the sugar a tad. But there will definitely be a next time, the basic flavor was nice, they were easy to make, and the texture was good, even with all my alterations.

Loved these! Made a few changes (did not try the original way first)- added one more tsp of cinnamon, added 1 tsp vanilla, shredded the apples with a grater (did not want chunks of apples), and after spraying the muffin pan with Pam I sprinkled cinnamon sugar into the muffin pan then added the batter (gives a cinnamon sugar coating to the whole muffin) and then sprinkled the top with cinnamon sugar. Made 1 dozen muffins and a 8X8 cake.

Very good and very simple! I shredded the apples (skin and all) in the food processor. I probably used "too much" apple, but I like my muffins full of fruit! Very moist and very good!

Oh YUM YUM YUM!! These were so easy to make. They are so good, and you are right, even better warm. They are almost all gone and I made them yesterday day. My family will just grab one and eat it any time. Best of all......I enjoyed watching my Grandson eat some :) Thank you for posting and will make again. Delicious! Everyone came back for seconds. The flavor and texture were both near perfect, and the muffins rose nicely. I added a cinnamon sugar mix and oats to the top, and that seemed like a winning combination with my household.

Wonderful little muffins! Not that these need it (I just like it) but, next time I'd like to try them with a streusel type topping. Thanks for sharing!

I used only brown sugar but Twin brown sugar. Only the 3/4 cup. But it was too sweet. But I didn't know that the Twin was sweeter. I used applesauce instead of butter. These muffins are great. They have a nice taste of apple and cinnamon. Thanks Parsley. Made for Market tag.

YUMMY! If you run into a guy with tattoos and a shaved head who asks you to marry him, just send him back home -- I'm already married to him. He only had one complaint -- they weren't big enough. Men! I made these as directed and we both love them. I was toying with the idea of topping them with a streusel type topping, but I doubt I'll change a thing. Thanks so much.

Okay, so I just couldn't leave well enough alone! You have a bunch of positive reviews on this as written, so I thought I'd take a gamble on some healthier adjustments. I used 1/2 white flour and 1/2 whole wheat, along with a little wheat germ. I used splenda for the regular sugar and only 1/2 cup of the brown sugar. I subbed natural applesauce for 1/2 of the butter. I sprayed the pan and skipped the liners, since lowfat tends to stick to the papers. I think they turned out well. I'm sure not as tasty as your original recipe, but then they wouldn't be lowfat, now would they. These will be great for breakfast, since we've committed to a sit-down, hot breakfast with the kids this school year. I'm going to try to whip up some cinnamon cream cheese spread with reduced fat cream cheese, because hubby wants butter or something on his! Made for kid friendly tag.

Yummy hot. I only used 2/3rds the sugar and they still tasted fantastic.
