From a 1960s rural New Zealand cookbook, this is the recipe for apple cider. I haven't tried it yet as I am still collecting enough swing stoppered glass bottles to recycle for this recipe! Cook time is actually the standing time

This is good, but if you have the Vitamix, you can make cider in minutes using the same ingredients. I substitute honey and brown sugar for sugar and also add cinnamon and allspice for flavering.
