  1. Stir-fry cubed chicken in 1 tbsp oil in a non-stick skillet until lightly browned and cooked through.
  2. Remove from skillet.
  3. in the same skillet, stir-fry onion, carrots and basil in 1-1/2 teaspoon oil until carrots are tender.
  4. Stir in pea pods and water.
  5. Stir-fry 2 minutes.
  6. Remove from heat. Stir in apples.
  7. Add mixture to chicken.
  8. Serve hot over cooked rice.
