Apple-Cherry Pie Loaves

This quick-to-make bread makes great holiday gifts for friends and family! I found this recipe in a folder of magazine and newspaper clippings that I ran across when I was cleaning up my office.

  1. Preheat the oven to 350 degrees. Grease bottom and sides of 6 mini loaf pans, 6x3x2.
  2. In a large bowl combine 3 cups flour, baking powder, cinnamon, salt, and baking soda.
  3. In another smaller bowl whisk eggs; whisk in 1 1/3 cups brown sugar, applesauce, and oil.
  4. Add egg mixture to flour mixture and stir until just moistened; batter will be lumpy. Stir in the dried cherries.
  5. Spoon batter into prepared pans and spread evenly.
  6. In a medium-sized bowl mix the 1/2 cup flour and 1/4 cup brown sugar. Cut in butter until mixture looks like coarse crumbs. Stir in pecans and chopped apples.
  7. Sprinkle topping evenly over batter in pans. Bake at 350 degrees for 35 minutes or until toothpick inserted in center comes out clean. Cool in pans on a wire rack.

Excellent and delicious recipe! I did't have dried apples, so I chopped up a small fresh one, which worked great! As my mini loaf pan only makes four loaves, I cut the recipe back to four instead of six, and found that I ended up with three, rather than four. I wonder if my mini loaf pans are larger than most - in any case, next time, I'll make the full recipe, as that will be perfect for my four loaf pan. Mine took an extra 10 minutes as well, which probably is another indication that my mini loaf pan is a little larger. Thanks, Loof, I'm so glad you posted this one! Made for Zaar Stars.

What a great recipe, & wonderful tasting loaves that come from it! Followed your recipe right on down, using some homemade applesauce as well as a generous measure of dried Fuji apples (for the topping)! These are very good. Moist not too sweet. I didn't use the dried apples on top because I didn't have any but added about 1/2 Cup of apple to it. Fabulous!
