Easy and refreshing salad. You can play around and use plain yogurt or add chopped pineapple or kiwi.
- 3 apples, sliced thinly
- 1 carrot, grated
- 1 teaspoon lemon juice
- 1⁄4 cup walnuts, chopped
- 1 cup pineapple yogurt
- Put all ingredients in medium bowl and mix together.
- Serve chilled or room temperature.
This is a refreshing salad! I really enjoyed this low-carb dish that was so filling and delicious. I will definitely be making this one again. Made for PAC Spring '08
