Agree with other reviews: something is wrong with this recipe. The ratio of the flour mixture to wet ingredients is off. I followed the recipe exactly as written and it produced heavy, dense, dry muffins. The flavors are good, however.
Too many ingredients, unusual for food network to have a recipe that doesn't work.
Don't use this recipe. There is either too much flour or too little liquid.
These muffins are so good and so good FOR you! I replaced one of the cups of flour with whole wheat flour, added 1/2 cup of bran, doubled the spices, used ener-G egg replacer, and added enough soymilk to bind the ingredients. I sprinkled oats over some of them and mixed oats into the rest. They were delicious! Other tasty additions would be raisins or coconut. Definitely a keeper!
These muffins are wonderful, I used 1/4 cup oil and 1/4 cup applesauce, thanks for sharing Dee!
These are soooo wonderful and yummy muffins!! I've made these many times and this recipe is always a big hit with my friends and family. Thanks for posting a real cool keeper!
