Apple Breakfast Popover

  • In a mixing bowl, beat the egg whites, milk, flour, butter and salt until smooth. Pour into an 8-in. square baking dish coated with nonstick cooking spray. Bake at 400 degrees F for 20-25 minutes or until golden and puffed. Meanwhile, in a small saucepan, combine the apples, jelly, water and cinnamon. heat over low heat until jelly is melted and mixture is heated through. Cut popover into quarters; serve with apple topping.

Made the popover and chopped apples last night, took a quick shower while the oven pre-heated this morning and let the uncooked popover sit on the counter (to warm up a bit), and popped it in the oven while I got ready for work and they were ready to go right on time. I used apple butter for the topping and heated mine in the microwave on 30 sec intervals! Thanks for posting! Made for PRMR tag!
     
  2. These were delicious! I found out after opening it that the apple jelly I bought was really runny, so I thickened the topping mix with a bit of corn syrup and it came out beautifully.
