These are a welcome change of pace to regular pancakes. 'The Guys' seem to love them.

We all really liked these! I used buttermilk, and ended up adding quite a bit more than the 1 cup it calls for. Be prepared to add an extra 1 1/2 cups to the batter to get it to the right consistency. I used 2 1/2 cups total, and that seemed to be just right.

This recipe needs some tweaking. The batter comes out thicker than it should, especially with all the apples, bacon and cheddar in it. I had to add about a 1/2 cup of milk. If i were to make them again I'd probably go with a pancake mix to avoid the consistency issues and make the finished product a little lighter. Also Granny Smith's were a little tart for our liking, maybe a Macintosh next time. Overall it's a good idea that just needs some finishing touches.

I made these for breakfast this morning - I knew I would enjoy them because I have been on an apple and cheddar kick lately. I think next time I might add a little more cheese. I tried them first with just butter on them (good but not quite sweet enough), with some honey (better) and with maple syrup (best). So I would suggest going with the recipe and serving with the syrup. These were simple to make and a nice treat for breakfast!
