Apple and Cinnamon Muffins (Vegan)

"This is a basic apple muffin or cake mix. It is very versatile. You can reduce the sugar to 3/4 and add 1/3 cup of cocoa to make a chocolate cake. Other things you can add are 1/3 cup of coconut, up to 1/2 cup of chocolate chips, cherries, fruit or nuts"

directions

  • combine the wet ingredients. Combine the dry ingredients and sift into the wet mix. Add walnuts. Mix gently but thoroughly.
  • Spoon into 5 muffin cases and bake for 20 minutes.

  1. I loved this recipe. I used a cup of apple sauce ( the actual cup in comes in) and a cup of normal sugar (the same cup used for the apple sauce) and added -3 tbsp of water. I baked them at 370F for 20min and ended up with 6 fairy large muffins.
     
  2. I'm eager to see how these turn out. I used spelt, but for the half cup of flour I used almond meal/flour that I ground up in my coffee grinder that I never use for coffee :) I also had some fresh pumpkin puree left over so I did 1 cup of apple sauce and 1 1/2 cups of pumpkin. I used walnuts and pecans. I also added blueberries. I used 2/3 cup of raw honey instead of sugar. I sprinkled the top with a little bit of raw sugar though. I'll let you know how it turns out! Ok guys, I made them, and thye were a hit! These are delicious!!! Thank you, thank you, thank you!
     
  3. These were quite delicious ~ I used 1/2 spelt and 1/4 almond flour, and 1/4 WW pastry flour, added some flaxseed meal and used pecans instead of walnuts (personal preference). No oven temp was given so I used 350F, used mini-muffin tins and baked about 12 minutes. Perfect little snacks. Thanks canthelpmyself ~ made for PAC Spring 2009!
