  • 23 cup dry breadcrumbs
  • 23 cup corn chips, finely crushed
  • 1 (1 ounce) package taco seasoning mix
  • 1 (16 ounce) jar taco sauce, divided
  • 2 lbs chicken, drum-sticks skinned

  • Preheat oven to 375 degrees.
  • Combine breadcrumbs, crushed corn chips, and dry taco seasoning mix. Place 1/2 cup taco sauce in flat bowl. Dip drum sticks in taco sauce, one at a time, then dredge in crumb mixture. Discard taco sauce used for dipping.
  • Place on lightly-greased baking sheet and bake for 30-35 minutes. Serve with remaining taco sauce.

  1. This recipe is a neat idea- just add a few common ingredients to drumsticks and you have a unique dish. I used a some leftover homemade salsa instead of taco sauce, so the chicken ended up very spicy... which I enjoyed. These turned out as crispy as they possibly could without being deep-fried. Served with a mild gazpacho to balance out the spiciness.
     
  2. Yum! I was trying to get these in the oven quickly before kick-off so just manually crushed the corn chips which left little chunks here and there that we enjoyed.
