I made this this morning and enjoyed it so much I just had to share. It's very simple and diabetic friendly. I have a single cup brewer that I love but you may make a big pot full and serve as many as you like. Time given is for a single cup coffee maker.
- 283.49 g fresh brewed coffee
- 3 inch cinnamon sticks
- 0.26 ml peppermint extract (you might want to start with less and add if you like)
- Splenda sugar substitute (or sugar)
- fat-free evaporated milk (optional)
- Brew the coffee.
- Drop the cinnamon stick into the cup.
- Add coffee, peppermint extract and Splenda.
- Add milk if using.
- Stir and enjoy.
Another winner for the Coffee Queen. I adored this simple treat. It was quick and easy to make and tasted incredible. I must confess I had two servings that morning. Made as directed but did use whip cream and sugar instead of the evaporated milk and splenda(personal preference). Thank you so much my friend for sharing a recipe that I will make often.
What a nice and easy way to give yourself a quick and easy treat, with the best part being no holiday pounds added. This was with the full 10 ounces of coffee and two drops of peppermint extract which was plenty. Thanks so much for the post.
Gimme5Tag. I cannot believe I forgot to rate this. EXCELLENT! I used italian coffee, 2 drops peppermint, 1/2 splenda and 1/2 and 1/2. I added in a 1/4 tsp of cinnamon and a cinnamon stick. Very good. Served this for NY Eve coffee and everyone raved. Thank you!
