- Heat oil, add finely chopped peppers, onion, celery, carrots, garlic, mushrooms and cauliflower; cook for about 5 minutes, stirring while it simmers.
- Add tuna, lemon, sugar and ketchup. Bring to a simmer and cook 5 minutes.
- Cool and refrigerate and it's ready to serve. Or pour it into sterilized jars and refrigerate until needed.
- When serving, place antipasto in a pretty dish, surround with crackers.
