Anti Dracula Garlicky Beans

Just in case you'll run into Dracula. If not, than just if you need a garlicky dip. This is a Romanian dish, so there's a reason Dracula's name is in there.

• Cook Time: 10 mins

Ingredients:

Servings: 2

• 1 (15 ounce) can white beans
• 2 tablespoons oil
• 4 -8 garlic cloves (or more if you wish, the more the better)
• salt
• pepper

Garnish

• 1 big onion, finely chopped
• 1 -2 tablespoon tomato paste

Directions:

1. Blend beans, oil and garlic till it becomes a paste.
2. Season with salt and pepper.
3. To make the garnish, fry the onion till gets brown and add the tomato paste.
4. Let it fry for 2 more minutes and add on top of the mashed beans.
5. Serve it with sourdough bread.
6. Goes with most breads,except toast.

Made this for a church function /potluck, served with crispy sea-salt pita chips. Followed the recipe as written, used 6 garlic cloves, and actually mixed the caramelized onions right into the dip so they were evenly distributed throughout. I liked this very much, but seemed to be the only one who did. *PRMR*
