For this recipe I chose pecorino romano. If there's a choice between pecorino and another cheese, I always choose the former. Used fresh garlic too. Treated this dish as a main dish and served alongside tossed green salad and pear sauce.
I'd never had garlic bread with tomatoes and a good layer of cheese like this before. I loved it! It's very filling, and a few slices with a salad would be a satisfying lunch! Wonderful flavor. Thanks so much for sharing this great recipe.
