Angel Hair Pasta With Lemon and Garlic

This is a nice light pasta dish from Rosie Daley, once Oprah's personal chef.

Ingredients Nutrition


  1. Bring a large pot of water to a boil over high heat and maintain at a boil.
  2. Put the olive oil and garlic in a saute pan and cook over medium heat just until the garlic begins to brown.
  3. Remove the saute pan from the heat and pour in the wine.
  4. Return it to the heat.
  5. Cook for another 1 to 2 minutes, until the wine has been reduced by 1/2.
  6. Stir in the lemon juice and tomato.
  7. Remove the pan from the heat.
  8. Place the pasta in the boiling water and cook to desired doneness, 30 seconds to 1 minute.
  9. Drain the pasta and put it into a warm serving bowl.
  10. Add the basil, parmesan, and black pepper, along with the tomato mixture.
  11. Toss and serve immediately.

This is a very nice recipe. Easy to make and with common ingredients. I made it as stated, but added additional parmesan at the table. This is now in my favorites cookbook and will be a staple in the future. Thank you very much for sharing it.

Great recipe, great ingredients, which left me little scope to meddle as I usually do. The only changes I made were to double the garlic (for the sworn garlic lovers who were to be eating this), to add a minced onion in step 2, and to add a cupful of chopped baby spinach leaves, in step six. I squeezed the juice from the tomato, so that it was only the fleshy part of the tomato that went into the pan. Just love angel hair pasta; being so fine it seems to beautifully capture every bit of flavour. And, of course, we loved the wine, lemon juice and basil. There was nothing not to love about this wonderfully flavoursome recipe: a truly heavenly dish for earth angels! Thanks for sharing it, lazyme.
