I loved these potatoes!! I omitted the butter and had to use dried thyme, but fresh would have been wonderful! The only thing is that they didn't crisp up as much as I would have liked but I know that was my fault for trying to fit too many in a small baking dish. Next time I will use a larger cookie sheet. Thanks!!

Ingredients Nutrition

  • 5 large red potatoes, cut into thin slices then quartered
  • 12 medium vidalia onion, finely chopped
  • 2 tablespoons butter
  • 2 tablespoons grated parmesan cheese
  • olive oil (enough to coat potatoes)
  • 2 tablespoons fresh flat leaf parsley, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon grill seasoning
  • 1 12 teaspoons dried basil
  • salt & pepper
  • Pam cooking spray

Directions

  1. Preheat oven to 375 degrees.
  2. Spray 9X13 pan with Pam.
  3. Place potatoes and onions in pan, toss with butter, and olive oil.
  4. Add remaining ingredients, and toss again to coat.
  5. Cover with foil, and bake for 20 min, take out, stir, and return covered to oven.
  6. Bake an additional 40 minutes or until tender.
