This is my new go to zucchini bread - and I thought my other bread was pretty good! I only put in half the choc chips (used dark choc) and thought that was plenty. Kids and adults ate it up. Otherwise, followed directions exactly. Next time, I will substitute half of oil for applesauce and use a mixture of wheat and white flour to make a little healthier.
This is the kids favorite way to have zucchini bread. I added 1 cup chopped walnuts also. My bowl was so full. It makes 4 loaves! Very yummy.
very yummy, i like that recipe makes 4 loaves. freezes very well too...thanks for the recipe!!
So delicious!!! I split it in half to make 2 loaves-this is going to be my new favorite zucchini bread recipe. It's so moist and tasty. All I did differently was add some walnuts because I love them in there too. My boyfriend had never had zucchini bread and thought it sounded gross untill 3 slices later...
Not sure if I did something wrong but this was the driest zucchini bread I have ever had. Usually when I make zucchini bread I put in raisins not sure if that is what usually makes it so moist?
All I can say is that this doesn't last at my house...or my mom's house...or my brother's house...or the house of anyone else who can con me out of a few loaves. Thanks for sharing!! P.S. Freezes very well.
This recipes is not only absolutely delicious, but it is very moist. Next time, I am going to add some walnuts for an extra crunch. Fantastic! Thanks so much for sharing this with us!
At the risk of getting laughed at, can anyone tell me do you peel the courgette first before you grate it?
Love this recipe! I didn't know zucchini bread could be soooooooo good. Everyone that had a piece just loved it as well. I can't wait to make this again. In fact, I think I will go to the store shortly and buy some more zucchini and chips so I can indulge myself (& others). Even my grandson, who does not like zucchini raved about this recipe. It is very moist and the chocolate chips are a must. One problem I had, was even though I used mini choc. chips, most of them sunk to the bottom of the pan, but it was still delicious. Can anyone tell me how to keep more chips in the bread?
