We LOVED this, after I tasted the filling I had to stop myself from eating more. I could just eat that! I used 1 1/2 c rice and less tortillas and was a bit worried about spillage (no problems though). It was worth the prep time!

I followed this recipe to a tee and it was delicious, my 8y/o and 4 y/o asked for seconds which is a rare occassion at dinner. I will definetly make this again. Thanks for the recipe

This is yummy. I did use Greek yogurt in place of the sour cream and 1/2 of the cream cheese to try to lighten it up a bit. It makes a lot. I will be eating left overs for a few days.

This was an excellent recipe I used leftover Knorr Spanish rice instead because the was what I had. I also used dried cilantro and dressed the top up with diced tomatoes and green onions as you will see in the picture I posted. Otherwise I followed it to a T. It was yummy and I received a lot of compliments. 5 Stars from me.

This was my first casserole ever. I was hesitant to make one because it is more of an american food rather than a hispanic one, which is what we are used to eating. Simply put, it was out of our "safe" zone for foods. This recipe had alot of my favorite ingredients (cumin, cilantro, coriander, green chili peppers). My very picky family really liked it. I did not have cream cheese so that was not added but I did add green onions. Thank you so much for making my first experience with a casserole a very pleasant one!

We really enjoyed this dish. The prep time was a little time invasive, but the end results were worth it. My husband thought the whole beans were a bit much, and has requested that I use refried or mashed beans next time. I think it will work just fine with the recipe! This was our first time making anything enchilada related, and it was a big hit.

this is a make again in our home! really delicious, and the leftovers are great the next day, too!! the cilantro makes this dish stand out, IMHO!!
