This turned out really good. I would recommend eating it warm as it has a egg custard appeal to it. Even though I am a huge coconut aficionado this didn't seem to overbearing.

Super easy, quick dessert that we enjoyed. I've seen similar recipes that call for Bisquick, but like this one that has ingredients I can pronounce. Thought this was best served slightly warm. Thanks for sharing the recipe!
I too had to try this out of curiosity. While it's not what I would choose to eat if I was ordering a dessert we enjoyed it. This would be great to whip up for unexpected guests!!!
Oh my gosh this is so good and easy too! I made it with soymilk and had to increase the cooking time a bit. It's almost like a custard on the inside with coconut on the top. Yummy yummy!! My kids loved it too so it won't last long and I know I'll be making another one.
I cooked this last night and this morning I only have a half of a pie left. The only way it could be easier is if it mixed,cooked and served itself. I had to come back and state that after making 3 pies in less than a week...this pie is a hit with everyone
