Absolutely wonderful breakfast, & I even see myself making it for a quick & very satisfying supper some night when I'm not wanting a whole lot of anything! Followed your recipe right on down, including the coconut! You really know how to dress up a bowl of plain ol' oatmeal, & the recipe is a great keeper! Thanks for sharing it! Delicious! I didnt use the extracts or coconut, but used splenda and cinnamon instead. Now I have this practically every morning, adjusting the fruit to all three or just one of them if that is all I have.

Delicious oatmeal with interesting flavours. Definitely use the coconut. It adds a great deal to the flavour

What a wonderful combination of flavors. I used fresh pineapple and lightly toasted the coconut before sprinkling over all. This will definately be a repeat.

This brought the tropics right into my very cold kitchen! I used crushed pineapple because I had it on hand, 2 tablespoons of shredded coconut, and topped it off with a little skim milk. I highly recommend the coconut in this because it really adds to the flavor and texture. This is an oatmeal I wouldn't hesitate to serve in winter or summer!
