I adapted this recipe for my family, even the ones that do not like lasagna love it!!! It is very simple and you can use either no cook lasagna noodles or regular lasagna noodles, use your preference. Great for OAMC make a few and freeze for those nights you need a quick meal. If using no cook noodles cover with aluminum foil and cook for 60 minutes or until noodles are tender. Cook times are approximate depends on your oven, use of cooked or no cook noodles and how gooey you like your cheese!!!

  1. Cook noodles according to package directions, drain.
  2. Brown ground beef,drain. Pour meat back into skillet, add pasta sauce and allow to simmer for 10 minutes.
  3. In bowl mix ricotta cheese,handful of mozzarella cheese, handful of Parmesan cheese, egg, salt and pepper. Mix well.
  4. In 9x13 baking dish place enough of the sauce to cover the bottom of pan. Add a layer of noodles, add ricotta mixture and spread evenly over noodles. Add another layer of noodles then cover with remaining sauce.
  5. Sprinkle remain cheese over top.
  6. Place in 350 degree oven and cook until cheese is melted and bubbly.
