Very good! I was surprised by the spicy kick that the red pepper added. We also didn't have any dried onion, so I used 1/4 cup diced fresh onion instead.

These were fantastic! I made them exactly as written and used the muffin tin. My family has always loved meatloaf but when my dh was diagnosed with celiac we had a hard time finding a solution without using the expensive crackers. Thanks so much!! This will be made often!
