Made this with leftover thanksgiving turkey, added a tall can of black beans (drained and rinsed), an extra jalapeno, and some zucchini at the end. I omitted the tomato sauce because I didn't have any. It was quite good.
This was an awesome recipe. I used leftover turkey from Thanksgiving and it worked perfectly. I actually cut the recipe in half since there was only two of us but still used the whole jalapeno and the heat was perfect. Very balanced and delicious. Low fat too!
Hello, darling! This is some good soup. This was full of flavor and hearty without weighting you down like some cheesy versions. I cut the broth back to 5 cups and had to go with a can of green chilies b/c I had no jalapeno. I added some chopped celery just to use some up. Definitely went with the wine. Did full fat homemade tortilla strips which were killer. Whole family said this was a keeper.
I always get asked for this recipe when I take this dish to a pot luck. I do think it needs a little bit more heat so I add additional jalapeno. I also add a can of drained black beans and some cilantro. Optional when serving, a dollop of sour cream. Its delicious, absolutely delicious.
Very, very good. I made this for football Sunday and it was a big hit. Makes you feel all warm inside. I love the fact that it is healthy, too. So many soups like this have cheese already in them. I liked that it was left out for a topping.
Amazing-it is! i added some black beans, and next time i will add more jalapenos (kick it up some more). i used one can of diced tomatoes and one can of diced tomatoes with green chilis (it's all i had). will be making and freezing again. thanks
WOW!!!... amazing is right!!! I changed it up a bit because, I can't seem to be able to just leave a good recipe alone! I tend to like my meats browned rather than just boiled so, I pan fried the chicken breast (I added a couple more breasts), until browned than added it to the soup with the drippings from the pan. I followed someone elses suggestion and mashed a can of cannellini beans to thicken the soup. In addition, because I like color, I added a can of black beans, some red and yellow peppers in addition to the green, about three stalks of celery an extra garlic clove and another jalapeno pepper for spice. I omitted the 1/2 cup of water or wine and added another can of chicken broth. Because of all of my additions, I added a few more dashes of the three spices. Simmered for about an hour and served with some homemade tortilla strips and a sprinkle of cheese... it was truly AMAZING!!! With the extra jalapeno pepper, I was afraid it may be too spicy but, it wasn't at all... I may even add more next time. I was thinking that a sprinkle of cilantro may be a nice touch too!!! This will be an all time favorite in our household from now on!!! Enjoy!!!
Made this for my DBF because I don't like him eating canned soups with all that junk in it. He loves spicy food and most recipes I have to up the spices but this had the perfect heat for him. The only change I might make is to use a little less chicken but I guess it depends how big the pieces are. I froze the leftovers and now he has a bunch of healthy lunches all ready! Thanks!
