A short little recipe I've saved but never made. It sounds like it would be good over ice cream.
- 1 cup brown sugar
- 1 cup whipping cream
- 1⁄4 cup light corn syrup
- 2 tablespoons butter
- 2 tablespoons Amaretto
- In medium saucepan, combine all ingredients except the amaretto.
- Bring to a boil, stirring occasionally.
- Reduce heat, boil gently, 8 to 10 minutes, or until slightly thickened.
- Remove from the heat; stir in amaretto.
- Serve warm.
I made this sauce to drizzle over pound cake for a Pokeno game and everyone raved about it - it is very rich and creamy. I did simmer mine for a total of 15 minutes because it seemed to be still be a little thin after 10 minutes. Once it reached room temperature it was the perfect drizzling consistency. It was absolutely wonderful drizzled over the pound cake. I can't wait to try it over ice cream! Thanks for a great recipe, Barb!
