Amanda's Sourdough Impossible Pie

ingredients
- 354.88 ml sourdough starter
- 3 eggs
- 4.92 ml sea salt
- 2.46 ml dried herbs
- 9.85 ml baking powder (aluminum-free)
- 29.58-44.37 ml butter or 29.58-44.37 ml coconut oil, melted
- water or milk, to make a thick cream-like consistency
- 236.59 ml cheese, grated
directions
- Beat together all ingredients except the cheese.
- Grease a deep pie dish or an 9×9 baking dish and put in around 3 cups of your desired filling, You can use whatever you like for filling. Amanda offers nice suggestions at http://mandyskitchen.wordpress.com/2011/04/10/sourdough-impossible-pie/.
- Top with the sourdough mixture.
- Sprinkle cheese over the top and bake in a preheated 400 degree oven for 40 minutes or until set. Let stand 5-10 minutes before serving.

I used duck eggs for the topping and so I didn't need water or milk because duck eggs are quite large. I used oregano, basil, rosemary for the herbs. Filling: 2 1/2 fennel sausages halved then sliced, 2 sweet peppers cut into strips, 1 med onion halved then sliced, half head of garlic, 3 small potatoes med dice. Parboil potatoes. Reserve cooking water. Sautee sausage, peppers, onions and garlic, season with salt and pepper. Deglaze pan with potato water. Then add a couple tblsps of sourdough mixture while stirring and cook for 1 minute to thicken. Add potatoes to mixture. Season again with salt. Pour into greased bakeware and top with topping. I waited a bit to add cheese so it didn't get too brown or burn. Yumminess!!
