Amanda & Ivan's Orange Slice Cookies

"An oatmeal cookie using orange slice candies....we have used green & red slice candies for Christmas but the family prefers the orange because our dear neighbors Ivan & Amanda gave them to us when we lived in San Jose,Ca and it makes for fond childhood memories ."

ingredients

• 1 cup light brown sugar, firmly packed
• 1 cup granulated sugar
• 1⁄2 cup shortening
• 1⁄2 cup butter
• 2 eggs
• 1 teaspoon vanilla
• 2 cups all-purpose flour
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• 1⁄4 teaspoon salt
• 2 cups quick-cooking oats
• 2 cups orange slice candy, finely snipped
• 1 cup flaked coconut

1. PREPARATION:.
2. In a large mixing bowl, cream sugars with shortening and butter until light and fluffy. Add eggs and vanilla extract; beat well. In a separate bowl, combine flour, baking soda, baking powder, and salt.
3. Stir to blend. Stir dry mixture into the creamed mixture. Stir in oats, orange slice candy, and coconut. Shape into 1-inch balls. Place on a greased cookie sheet. Bake at 350° for 10 to 12 minutes, until lightly browned. Remove to wire rack to cool.
