A little different variation than others have posted. A good friend gave this recipe to me.
- 4 teaspoons lemon juice
- 16 ounces cream cheese (2 blocks)
- 1⁄2 cup pecans, chopped
- 1⁄2 cup coconut flakes
- 1⁄2 cup crushed pineapple, drained
- Mix all together & chill 3-4 hours if possible, or overnight. Serve with plain old fashioned coconut cookies (the $1 bags in stores).
