Aloha Carrots

  • Combine carrots, water and salt in a saucepan.
  • Bring to boil, reduce heat to medium and cook until carrots are tender crisp, about 15 to 20 minutes.
  • Drain water, stir in sugar, pineapple and butter.

This made for a very nice side with a little sweetness (I scaled it back for 3 serves) and it went great with mashed potatoe and steamed vegetables (green beans, brocolli and cauliflower) and I also steamed my carrot slices making it a really easy side in just having to mix the other ingredients in, though for dietary reasons I cut the brown sugar back to 2 teaspoons (1/2 tablespoons for Aussies) and for the pineapple I used a product in natural juices NOT syrup and was thoroughly enjoyed by us all.   2. For some reason this recipe we were divided on. I personaly loved this compared to my DH he was o.k.with this. For me I could see myself making this just for me when I am by myself, quite easy to make.
     
  3. What a simple way to dress up carrots. I steamed them in the microwave as opposed to boiling. This was great. Thanks
