- 4 1⁄2 cups baby carrots
- 3⁄4 cup water
- 3⁄4 teaspoon salt
- 3 tablespoons brown sugar
- 3⁄4 cup crushed pineapple, drained
- 3 teaspoons butter
directions
- Combine carrots, water and salt in a saucepan.
- Bring to boil, reduce heat to medium and cook until carrots are tender crisp, about 15 to 20 minutes.
- Drain water, stir in sugar, pineapple and butter.

This made for a very nice side with a little sweetness (I scaled it back for 3 serves) and it went great with mashed potatoe and steamed vegetables (green beans, brocolli and cauliflower) and I also steamed my carrot slices making it a really easy side in just having to mix the other ingredients in, though for dietary reasons I cut the brown sugar back to 2 teaspoons (1/2 tablespoons for Aussies) and for the pineapple I used a product in natural juices NOT syrup and was thoroughly enjoyed by us all.
