Aloha Carrots

A simple side dish that goes especially well with seafood. I'm guessing that the sauce would also work well with any veggie that you might want to 'Hawaiian up'.

This made for a very nice side with a little sweetness (I scaled it back for 3 serves) and it went great with mashed potatoe and steamed vegetables (green beans, brocolli and cauliflower) and I also steamed my carrot slices making it a really easy side in just having to mix the other ingredients in, though for dietary reasons I cut the brown sugar back to 2 teaspoons (1/2 tablespoons for Aussies) and for the pineapple I used a product in natural juices NOT syrup and was thoroughly enjoyed by us all. Directions

  1. Combine carrots, water and salt in a saucepan.
  2. Bring to boil, reduce heat to medium and cook until carrots are tender crisp, about 15 to 20 minutes.
  3. Drain water, stir in sugar, pineapple and butter.
