    Yummy apple muffins I usually make for breakfast but are also a great snack. This recipe is modified from one found in the Mendocino Mornings cookbook from the Joshua Grindle Inn in Mendocino, Ca. You can use any type of apple, or even pears. And of course, you can use sugar instead of the sugar substitute I use.

    Directions:

      Preheat oven to 375°F.

      Lightly spray muffin tin with cooking spray.
    3. 3
      Mix together apples, allspice and cinnamon and set aside.
    4. 4
      Combine flours, oats, sugars, baking powder, baking soda, cinnamon, allspice and salt in a large bowl.

      In a separate bowl, whisk egg substitute and canola oil.

      Add milk and mix well.

      Stir wet ingredients into dry ingredients until just moistened.

      Spoon into prepared muffin tins and top each with two slices of apple. Press apple slices lightly into batter.

      Bake for 20 minutes or until a toothpick comes out clean.
