Almost Twinkie Cake

"Ok I will admit it, this does not taste just like a twinkie -- but it is easy as can be with a doctored up cake mix and soooo good!!! Not sure where this came from, I have been making it for years! I generally use canola oil for the vegetable oil. The last five ingredients are for the topping."

  • Combine cake mix and pudding in a large bowl, sift together with a fork.
  • Make a well in the middle and add oil, eggs, pudding, water, and half the vanilla to it.
  • Beat this mixture at medium speed for about 2 - 3 minutes.
  • Pour into a greased and floured 9x13" pan.
  • Bake at 350F for 40-45 minutes or until a cake tester inserted near the middle comes out clean. while the cake is cooling, make the filling.
  • FILLING.
  • In a saucepan mix the flour with the milk.
  • Cook this mixture until it thickens, stirring constantly; cool.
  • Add sugar, salt, shortening, margarine, and remaining vanilla.
  • Beat this mixture until it is fluffy and resembles the texture of twinkie filling. Spread this on the cooled cake.
  • Store the cake in your refrigerator.
