ingredients
- 1 boneless skinless chicken breast, cooked chopped and cooled
- 1⁄2 cup mayonnaise (if salad is too dry you can add more)
- 1 teaspoon dried tarragon
- 1⁄2 cup sliced almonds
directions
- Combine all ingredients.
- Cover and chill (I like to make this so that it can chill for a couple hours, so that the flavors meld) Serve on bread or rolls of choice, or with crackers.

Wow! I'm THRILLED that I stumbled upon your recipe. I've always been an avid Publix shopper and it wasn't until I was recently on vacation in Pensacola that I discovered the Almond Tarragon Chicken Salad -- in the Publix deli. We bought one small container of it and took it, along with other meal items back to the hotel for an afternoon lunch. I immediately feel in love with it! I wanted more! The next day, I went back to Publix and bought at least 4 more containers. And since arriving home from vacation, I can't stay away from the deli area, as I'm always buying 6-8 containers each week. I made your recipe tonight and I'm completely AMAZED as how consistent the taste is....WOW! I made LOTS of it....now, I'm wondering if it would be okay to freeze, for those times when I crazy it, but don't wish to be in the kitchen? Thanks again.....sooooooo delicious! Jason Cleveland, TN

A very good salad. I made it just like you directed, no substitutions. This makes a great savory, creamy sandwich spread. I suppose if you wanted to eat it as a salad, you could add maybe a chopped apple for a different flavor and texture. I really liked this, and I will use the recipe again. Thanks for sharing.

After living in Jax FL for 15 years, Hubby and I have retired. We moved back to WV and the mountains where we grew up.
It's been quite an adjustment getting use to the season changes again!
Our son and youngest daughter live very close and I enjoy seeing my grandkids.
I enjoy gardening both veggies and flowers.
