Perfect, fast, coconut macaroon-type cookies. I got exactly ten nice sized cookies. You could certainly double the recipe. I made this because of the photo--They are going to a new mother who is bringing her baby home today. Next time, they only thing I would change would be to completely leave out the nutmeg, but that is personal preference. Great to use up a couple of egg whites in a hurry!

made these for christmas 2006 and they were very good. the only problem i had was that they stuck to the parchment paper. will make them again.

Yum!! These turned out really nice and everyone seemed to like them a lot! One suggestion is to use just a little less nutmeg and add in some cinnamon - of course this is only if you don't care for the nutmeg to much b/c it is a little strong. Otherwise, these are really good and everyone loved them.
