Almond Pie Crust

"My Grandmother-In-Law gave me this recipe because so many of our family have celiac disease or are allergic to wheat. I love it so much, that I now use it for all of my pies. If you don't like almonds, you can use any other nuts instead"

  • Combine brown sugar, Xanthun, Rice Flour, Vanilla and Almonds in a medium mixing bowl.
  • Cut in butter with pastry cutter or fork.
  • Spread the mix into a nine inch pie pan and shape with fingers or bottom of a spoon to cover the bottom and sides.
  • Bake for 15 minutes in oven at 350 degrees.
  • Let cool.
  • Pour in filling or use in place of graham cracker crusts.

  1. This turned out really well for me and everyone loved it. The recipe is a bit non specific though, which is why I give it 4 stars. It doesn't specify if the almonds should be skin on or blanched. As someone new to gluten free baking, this was a question I had. After some research, I decided on using blanched. Also, how finely should they be chopped? Again, the recipe leaves you guessing. I put them in my food processor and processed them until quite mealy and fine as it seemed to make sense to do it that way. I used this crust as the stand in for a wheat pastry crust for a pumpkin pie. I prepared the crust, poured in the filling and baked it for 55 minutes at 375. The crust was a little over browned around the outside, but otherwise held up. I would adjust the oven temp down next time and bake slightly longer as necessary. I truly appreciate having a 'go to' wheat free pie crust now. Thanks for the recipe!
     
  2. My go to pie crust. Have celiacs in the family and no one even realizes this crust is gluten free. I melt the butter and put the almonds thru the bullet to make them flour. Fantastic.
     
  3. This is my new favorite gluten free pie crust recipe. Goes well with most pie fillings. My only recommendation is to make sure to spread the pie crust fairly thin as it could be hard to cut otherwise.
     
  4. What a wonderful crust! I made it vegan by using Earth Balance Buttery Spread instead of butter. I think the xanthan gum made it nice and fluffy/flaky. I used it for Recipe #302394, but this will be my go-to crust from now on.
     
  5. OMG!!! This is the best pie crust I have ever tasted. It was also very easy to make. I substituted a Bob's Red Mill All purpose GF Baking Flour for the rice flower. I made a pumpkin pie with mine and it was so good I will never make a different kind of pie crust.

I have lived in Utah my whole life, have been married 11 years and have 4 children. I have recently gone back to work now that they are all in school and we have put my oldest into a privat high school. As I am getting older I am feeling very nostalgic for the foods and traditions that I grew up with and want to make sure that my children get a chance to experience all of the fun Lebanese foods and things that I did when I was growing up. When I have spare time it is spent playing with my family or hanging out at my church, and no, even though I have lived in Utah my whole life I am not LDS.
