My mother-in-law gave me this recipe which I have been taking to work for lunch on a regular basis. I make the dressing ahead of time and just pack enough to top my spinach for a great lunch. It's lite, filling and tastes great.


  1. Mix all dressing ingredients.
  2. Toss with spinach
  3. Top with sliced almonds and parmesan cheese.
