Almond Joy Cake With Creamy Coconut Butter Frosting

Chocolate, Almond, & Coconut make up this 2 layer cake. One layers is the coconut layer and the other is chocolate almond. This is made for a crowd. You can make the whole cake or just each layer. If baking both cakes at once be sure to rotate them in the oven for even baking.

  1. Butter and dust with flour 2 9x13 pans.
  2. Combine the first 6 ingredients for the Coconut cake Layer in a mixing bowl and beat on medium speed for 3 minutes.
  3. Pour into 1 of the prepared pan and bake for 30-45 minutes until toothpick comes out clean.
  4. Cool at room temperature for 15 minutes.
  5. Invert onto rack and brush 1/4 cup coconut rum over cooled cake.
  6. Let sit for 1 hour.
  7. Combine the first 6 ingredients for the Chocolate Almond cake Layer in a mixing bowl and beat on medium speed for 3 minutes.
  8. Pour into prepared pan and bake for 30-45 minutes until toothpick comes out clean.
  9. Cool at room temperature for 15 minutes.
  10. Invert onto rack and brush 1/4 cup almond liqueur over cooled cake.
  11. Let sit for 1 hour.
  12. Meanwhile cream butter, salt, and extracts, beating until light and fluffy. Add sugar gradually, beating after each addition. Add milk, beating until smooth. Beat in additional milk until desired spreading consistency is reached.
  13. Frost cooled cake and garnish with toasted coconut!

Love this recipe !!! Looking for a new cake for Hubbys bday. Didn't have the liqueur or rum. But it is still good. I used almond flavor and coconut flavor instead. So moist and yummy. Thank you

My neighbor is always helping someone, mowing an elderly couples lawn, shoveling the sidewalks to metion a little, Wanted to do something nice for his birthday. He always seems to have an almond joy bar in hand. So all the neigbors got together and we planned a suprise BBQ for him. We had a T shirt made with the almond joy bar on it. I made this cake and decorated with mini almond joy bars. Thanks for sharing.

I made this for my BIL's birthday and it got good reviews from everyone. The frosting is fantastic and there was plenty to frost the cake with. It did take me longer to make than indicated, but I am a pretty slow cook sometimes as well as doing things in between. The cake itself was very moist, a little denser than others I made, but it fit with the flavor and frosting. I am now the favorite SIL!!! Thanks Rita!
