I made these for a Labor Day Celebration once. The adults loved them as much as the children!
- 1 pint vanilla ice cream, softened
- 1⁄3 cup semisweet mini chocolate chips
- 1⁄2 teaspoon almond extract
- 1 cup Cool Whip
- 1⁄4 cup crushed cookie
- In bowl, combine first 3 ingredients.
- Fold in Cool Whip.
- Spoon into paper lined muffin tins.
- Sprinkle with cookie crumbs and freeze.
