Almond, Chicken & Apricot Rice

"The original recipe was in a Better Home and Garden magazine for a sandwich. I changed it to make a hot dish because I loved the crunch of the almonds and the sweet/tang of the apricots."

  1. I am sorry Krsi Sue, this didnt work well for us. The apricots did not seem to blend well with this. Neither the mouth feel or the flavor of the apricots were good for us. The honey gave it a sweet flavor that also did not blend well. I think the almonds, cooked chicken, apricots, celery, sour cream, cream cheese, and dijon mustard would be very flavorful and nice for a sandwich filling but as a hot dish I dont think the flavors did real well. Also this took almost 40 minutes to really heat thru instead of 15.
     
  2. I took the first 5 ingredients with salt & pepper for sandwich filling. Excellent!! Then a week later I made the recipe as written. I love rice! Great!!I love the mix of flavors and the crunch.
