Almond Butter Balls - Danish Mandelsmørboller

Almond flavored cookies rolled in powdered sugar. From a Danish cooking site. Sounds very similar to a recipe my Mom makes for her Christmas cookie trays. For ZWT6.

  1. Cream butter and sugar. Add vanilla and almond extracts and mix well. Stir in flour and fold in the chopped almonds. You may need an additional 1/2 cup of flour to get a good consistency.
  2. Shape in small balls and place on parchment lined cookie sheets.
  3. Bake in a preheated 350º oven about 20 minutes, until slightly browned. Roll in powdered sugar while warm. Or, for less mess, shake in a ziplock with powdered sugar while warm.
