Allegra's New Favorite.....CocaCola Cake

"This is ooey gooey yummy. This was the first from-scratch my 5 year old helped make, so of course it's her favorite. The icing is kinda like fudge and the cake is very tasty. A big winner with kids. Took it to a picnic and the kids all devoured it. I loved asking people to guess the secret ingredient too."

ingredients

• Cake

• 2 cups flour
• 2 cups sugar
• 1 cup butter
• 3 tablespoons cocoa
• 1 cup Coca-Cola
• 2 cups mini marshmallows
• 1 teaspoon baking soda
• 2 eggs
• 1⁄2 teaspoon salt
• 1⁄2 cup buttermilk
• 1 teaspoon vanilla

• Icing

• 1⁄2 cup butter
• 8 tablespoons Coca-Cola
• 1 cup chopped pecans
• 2 tablespoons cocoa
• 1 (1 lb) box powdered sugar
• 1 teaspoon vanilla

directions

1. Sift flour, sugar, soda and salt into a large bowl.
2. Heat butter, Coke, and butter to boiling point.
3. Pour over flour mixture.
4. Stir in eggs, buttermilk, vanilla and marshmallows.
5. The marshmallows will float and batter will be lumpy.
6. Pour into greased and floured 9 X 13 inch pan.
7. Bake at 350 degrees for 30 to 35 minutes.
8. Cool.
9. After cake has cooled, heat butter, coke and cocoa to boiling point.
10. Pour over sugar and mix well.
11. Add nuts and vanilla.
12. Pour over cooled cake.

This cake is definitely good; the only problem I found with the recipe (I got mine from a friend but the ingredients are the same) is that you might want to pour some of the batter into a smaller pan; if you put all of it in one pan it drips out leaving a mess.

This was such a fun cake to make! A bit sweet and gooey but the kids kicking around here loved it! I was impressed by just how moist this was. Next time we make it we are going to try Dr.Pepper just to see how it comes out! a definite fun cake to make with kids! Thank you!
