Burgers
- 1 tablespoon butter or 1 tablespoon margarine
- 2 stalks celery, chopped
- 2 medium carrots, shredded
- 1 small red onion, chopped
- 1⁄2 teaspoon ground cumin
- 1⁄4 teaspoon fresh ground pepper
- 1⁄4 teaspoon salt (I omit the salt)
- 1⁄2 lb ground turkey
- 1⁄2 lb turkey sausage, casings removed

Special Sauce
- 1 cup plain nonfat yogurt
- 2 tablespoons minced fresh parsley or 1/2 teaspoon dried parsley
- 1⁄2 teaspoon ground cumin
- 1⁄4 teaspoon salt (I omit the salt)
- 1⁄8 teaspoon fresh ground pepper
- 6 small whole wheat pita bread, toasted,split (I use whole wheat hamburger buns)
- 6 leaves red leaf lettuce (I use iceburg)
- 6 slices tomatoes

Make Burgers:
- In nonstick skiller, over medium heat, melt butter.
- Add vegetables, saute 8 minutes, or until very tender.
- Add cumin, pepper, and salt; mix well.
- Remove from heat and allow to cool.
- Remove 1/4 cup of vegetables and set aside in medium bowl.
- Combine remainder vegetables with turkey and sausage; mix well with hands.
- Form into 1/2 inch thick patties.
- Broil burgers 4 to 6 inches from heat, for 12 minutes, turning once.

Make Sauce:
- Into bowl with reserved vegetables, stir in all the sauce ingredients.
- Serve burgers in pitas (or on buns) with lettuce, tomatoes, and sauce.

<p>I'm the mother of 2 (boy and a girl), currently 3 grandchildren (all girls), 1 Chihuahua (Bebe` Chico), and at last count 8-yard cats. Too many of my city friends believe I live a pretty boring life in the country. But country life is perfect for me. For fun I travel around the state visiting country fairs and craft shows. <p>My biggest problem right now is finding time to spend on this wonderful site.
