This came out of an old cook-booklet. Very basic but one of the best. I like to micro-cook and refrigerate the potatoes ahead of time. Cook time represents minimum time to chill.
- 4 medium potatoes, cooked, peeled, cubed
- 3 eggs, hard-cooked, chopped
- 3 green onions, chopped (include green part)
- 2 stalks celery, chopped
- 1⁄4 cup sweet pickle relish
- 1 teaspoon salt
- 1⁄8 teaspoon pepper
- 3⁄4 cup mayonnaise
- 1 tablespoon prepared mustard
